Seitan Taco Salad

Wheat gluten, also called seitan, wheat meat, mock duck, gluten meat, or simply gluten, is a food made from gluten, the main protein of wheat. It is made by washing wheat flour dough with water until all the starch dissolves, leaving insoluble gluten as an elastic mass which is then cooked before being eaten.

Ingredients:

1 head of iceberg lettuce
3 roma tomatoes
2 avocados
1 (15 ounce) can red kidney beans
1 package ground Seitan (I suggest Upton’s Naturals)
1 package Daiya cheddar shreds
Black olives & tortilla chips to top

Cook Seitan as you would ground beef/turkey in a pan.  Add beans at the end to heat.  Chop rest of ingredients, mix together in a large bowl, top with black olives, tortilla chips, and hot sauce.
